  • ¼ cup honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 3 garlic cloves, minced

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Dice sweet potatoes into 1-inch cubes. Slice the red onion. Cut sausages if they are too long.
  3. In a large bowl, toss the sweet potatoes and onions with olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet.
  4. Nestle the sausage pieces throughout the vegetables on the sheet pan.
  5. In a separate bowl, whisk together the honey, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, and smoked paprika (if using) to create the honey garlic sauce.
  6. Drizzle half of the honey garlic sauce over the sausage and vegetables on the baking sheet.
  7. Roast for 25–30 minutes, flipping the contents once halfway through, until the sausage is browned and the sweet potatoes are fork-tender.
  8. Remove the pan from the oven and drizzle the remaining honey garlic sauce over everything. Gently toss to coat.
  9. Serve immediately.
