Description

Ingredients

  • 4 pieces boneless (skinless chicken thighs)
  • ¼ cup honey
  • ¼ cup soy sauce
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup broccoli florets
  • 1 cup bell peppers (sliced)
  • 1 cup cooked rice
  • Fresh parsley or green onions for garnish

Instructions

  1. In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, sesame oil, red pepper flakes, salt, and pepper.
  2. Add the chicken thighs to the marinade and let it marinate for at least 30 minutes.
  3. In a large skillet, heat olive oil over medium-high heat and add the marinated chicken thighs.
  4. Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through.
  5. Remove the chicken from the skillet and let it rest for a few minutes.
  6. In the same skillet, add broccoli and bell peppers, sauté for about 5-7 minutes until tender-crisp.
  7. Slice the rested chicken and return it to the skillet with the sautéed vegetables.
  8. Drizzle any remaining marinade over the top and toss everything together for a minute.
  9. Serve the chicken and vegetables over cooked rice, garnished with fresh parsley or green onions.
