Description
This easy and flavorful honey garlic chicken dish is perfect for a Halloween family dinner. It combines marinated chicken thighs with sautéed vegetables over rice for a delightful meal.

- 4 pieces boneless (skinless chicken thighs)
- ¼ cup honey
- ¼ cup soy sauce
- 4 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1 tablespoon apple cider vinegar
- 1 teaspoon sesame oil
- ½ teaspoon red pepper flakes
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup broccoli florets
- 1 cup bell peppers (sliced)
- 1 cup cooked rice
- Fresh parsley or green onions for garnish
Instructions
- In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, sesame oil, red pepper flakes, salt, and pepper.
- Add the chicken thighs to the marinade and let it marinate for at least 30 minutes.
- In a large skillet, heat olive oil over medium-high heat and add the marinated chicken thighs.
- Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest for a few minutes.
- In the same skillet, add broccoli and bell peppers, sauté for about 5-7 minutes until tender-crisp.
- Slice the rested chicken and return it to the skillet with the sautéed vegetables.
- Drizzle any remaining marinade over the top and toss everything together for a minute.
- Serve the chicken and vegetables over cooked rice, garnished with fresh parsley or green onions.
