  • 1/4 cup honey
  • 2 tablespoons adobo sauce (from canned chipotle peppers)
  • 12 chipotle peppers in adobo sauce, minced (adjust to spice preference)
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).
  2. In a medium bowl, whisk together honey, adobo sauce, minced chipotle peppers, minced garlic, soy sauce, olive oil, chili powder, and smoked paprika. This creates your honey chipotle glaze.
  3. Season the chicken thighs generously with salt and black pepper.
  4. Place the seasoned chicken thighs in a bowl or a resealable bag. Pour about half of the honey chipotle glaze over the chicken, ensuring each thigh is well coated. Let it marinate for at least 15-30 minutes at room temperature, or longer in the refrigerator.
  5. Grill the chicken thighs for 6-8 minutes per side, brushing with the remaining glaze during the last few minutes of cooking, until cooked through and nicely caramelized. If baking, place the glazed chicken thighs on a baking sheet and bake for 20-25 minutes, flipping halfway through and brushing with the remaining glaze.
  6. Ensure the internal temperature of the chicken reaches 165°F (74°C).
  7. Let the honey chipotle chicken thighs rest for a few minutes before serving.
