Description

This homestyle chicken pot pie casserole combines tender chicken, mixed vegetables, and a creamy sauce topped with golden crust.


Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1 cup chicken broth
  • 1 cup milk (whole or 2%)
  • 1/2 cup onion (diced)
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter
  • 1 can (8 oz) refrigerated crescent roll dough (or puff pastry)
  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil or butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  3. Sprinkle the flour over the onions and stir well. Gradually add the chicken broth and milk, whisking constantly until the mixture thickens (about 5-7 minutes).
  4. Stir in garlic powder, dried thyme, salt, and pepper. Mix well.
  5. Add the cooked chicken and frozen mixed vegetables to the sauce. Stir until everything is well combined.
  6. Pour the chicken mixture into a greased 9×13-inch baking dish, spreading it evenly.
  7. Unroll the crescent roll dough and lay it over the top of the chicken mixture, pressing the seams together to seal. If using puff pastry, roll it out and place it over the filling, trimming any excess.
  8. Brush the beaten egg over the dough to give it a golden color when baked.
  9. Place the casserole in the preheated oven and bake for 30-35 minutes, or until the dough is golden brown and the filling is bubbly.
