Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 2 to 3 tablespoons honey or maple syrup, to taste
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons grass-fed gelatin powder

Instructions

  1. Add the sliced strawberries to a blender or food processor and blend until completely smooth.
  2. If you want a smoother gummy texture, pour the purée through a fine mesh sieve into a small saucepan to remove seeds.
  3. Add the lemon juice and honey or maple syrup to the purée in the saucepan. Heat over low to medium heat while stirring constantly.
  4. Slowly sprinkle the gelatin over the warm mixture while whisking continuously to prevent clumping.
  5. Use a dropper or small spoon to carefully pour the mixture into silicone gummy bear molds.
  6. Transfer the molds to the refrigerator and chill for at least 30 minutes, or until the gummies are fully set.
  7. Gently pop the gummies out of the molds and store them in an airtight container in the refrigerator for up to 1 week.
