- 6 large eggs
- 1 cup liquid egg whites
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1 cup chopped spinach
- 1/2 cup diced red bell pepper
- 1/4 cup sliced green onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil or cooking spray
Instructions
- Preheat the oven to 350°F and lightly grease a 12-cup muffin tin with olive oil or cooking spray.
- If needed, sauté the spinach and red bell pepper for 2 to 3 minutes to remove extra moisture, then let them cool slightly.
- In a blender or large bowl, combine the eggs, egg whites, cottage cheese, salt, black pepper, and garlic powder until smooth.
- Stir in the shredded cheddar cheese, chopped spinach, diced red bell pepper, and green onion.
- Divide the mixture evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18 to 22 minutes, or until the centers are set and the tops are lightly golden.
- Let the egg bites cool in the pan for 5 minutes, then remove and serve warm or store for later.
