Ingredients

- 1 cup cottage cheese
- 1 cup Greek yogurt
- 1/2 cup unsweetened cocoa powder
- 1 cup almond flour
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- Line a 9×9 inch baking pan with parchment paper.
- In a bowl, mix cottage cheese, Greek yogurt, honey, eggs, and vanilla until smooth.
- In another bowl, combine almond flour, cocoa powder, baking powder, and salt.
- Gradually add dry ingredients to wet, mixing until just combined.
- Pour batter into the pan and spread evenly.
- Bake for 25-30 minutes until edges are set and a toothpick comes out with a few moist crumbs.
- Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely before slicing.
Notes
- Store leftovers in the fridge for up to 5 days.
- Can substitute honey with maple syrup for a vegan option.
