Ingredients

- 2 cups cooked, shredded chicken
- 2 cups corn (fresh or frozen)
- 1/2 cup Greek yogurt
- 1/2 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1 cup chopped romaine lettuce
- 1 teaspoon chili powder
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Boil fresh corn for 5-7 minutes until tender, then cool. Thaw frozen corn as per package.
- Chop red bell pepper and green onions.
- Combine Greek yogurt, lime juice, chili powder, salt, and pepper in a bowl.
- Add chicken, corn, bell pepper, and green onions to the dressing; mix gently.
- Place romaine lettuce on a platter and scoop salad on top.
- Sprinkle with chili powder or fresh herbs before serving.
