Description
Herbed Chicken and Couscous Bowls are a healthy and flavorful meal with tender herb-marinated chicken, fluffy couscous, and fresh vegetables. Quick to prepare and perfect for meal prep or weeknight dinners.

- 2 boneless, skinless chicken breasts
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup couscous
- 1 1/4 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Season chicken with oregano, thyme, garlic powder, salt, and pepper. Let sit 10 minutes.
- Heat olive oil in a skillet over medium heat. Cook chicken 5–6 minutes per side or until internal temperature reaches 165°F (74°C). Slice thinly.
- In a small pot, bring chicken broth to a boil. Remove from heat, stir in couscous, cover, and let sit 5 minutes. Fluff with a fork.
- Divide couscous between bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and feta.
- Garnish with fresh parsley and serve with lemon wedges.
