Ingredients

  • 1 rack of lamb (2 pounds), trimmed and frenched
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup fresh parsley, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • Fresh herb sprigs
  • Lemon wedges

Instructions

  1. Preheat to 400°F (200°C). Let lamb sit at room temperature for 30 minutes.
  2. Pat lamb dry and season generously with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear 2–3 minutes per side until browned.
  4. Mix parsley, rosemary, thyme, garlic, breadcrumbs, and olive oil.
  5. Brush fat side of lamb with Dijon mustard.
  6. Press herb mixture firmly onto mustard-coated side.
  7. Transfer skillet to oven and roast 18–25 minutes.
  8. Tent loosely with foil and rest 10–15 minutes.
  9. Cut between ribs to form chops and serve warm.
