- 1 rack of lamb (1½–2 pounds), trimmed and frenched
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil
- 1/2 cup fresh parsley, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- Fresh herb sprigs
- Lemon wedges
Instructions
- Preheat to 400°F (200°C). Let lamb sit at room temperature for 30 minutes.
- Pat lamb dry and season generously with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear 2–3 minutes per side until browned.
- Mix parsley, rosemary, thyme, garlic, breadcrumbs, and olive oil.
- Brush fat side of lamb with Dijon mustard.
- Press herb mixture firmly onto mustard-coated side.
- Transfer skillet to oven and roast 18–25 minutes.
- Tent loosely with foil and rest 10–15 minutes.
- Cut between ribs to form chops and serve warm.
