- 1/2 cup oats
- 1/2 banana
- 1 egg
- 1/4 cup milk of choice
- pinch sea salt
- 1/4 tsp baking soda
- chocolate chips (for topping)
Instructions
- Preheat a small cast iron skillet (6-8 inch) over medium-low heat and lightly coat with cooking spray or a touch of butter to prevent sticking.
- Mash the ripe banana in a mixing bowl until smooth, then add the oats and stir until well combined.
- Whisk the egg in a separate small bowl, then pour into the oat mixture along with the milk, sea salt, and baking soda. Stir everything together until you have a consistent batter.
- Pour the batter into your preheated skillet, spreading it evenly with the back of a spoon.
- Cook over medium-low heat for about 5-6 minutes until the edges begin to set and tiny bubbles appear on the surface.
- Sprinkle chocolate chips across the top of the partially-cooked oatmeal cookie, gently pressing them into the surface. Cover the skillet with a lid.
- Continue cooking for another 3-4 minutes until the center is just set when lightly touched.
- Remove from heat and let it cool for 2-3 minutes before enjoying.
