- 12 eggs
- 1 cup cooked sausage, crumbled
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet over medium heat, sauté the diced onion until translucent.
- Add mushrooms and cook until browned and moisture evaporates.
- Stir in garlic and sausage, cook for another minute.
- Add chopped spinach and cook until just wilted. Remove from heat.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Stir in half the shredded cheese.
- Add the sautéed mixture into the eggs and stir to combine.
- Pour everything into the prepared baking dish and top with the rest of the cheese.
- Bake for 30–35 minutes until the top is golden and center is set.
- Let cool slightly before slicing and serving.
