This Hearty Italian Sausage Tortellini Soup is a cozy and flavorful meal loaded with bold Italian sausage, tender cheese tortellini, fresh spinach, and a rich tomato broth.

- 1 lb Italian sausage
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 9 oz refrigerated cheese tortellini
- 1 tsp Italian seasoning
- 2 cups fresh spinach
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- Add onion, carrots, and celery to the pot. Cook for 5–7 minutes until softened. Add garlic and cook for 30 seconds.
- Return sausage to the pot. Stir in crushed tomatoes and chicken broth. Add Italian seasoning, salt, and pepper. Simmer for 15 minutes.
- Add tortellini and cook according to package directions, usually 5–7 minutes.
- Stir in spinach and cook until wilted, about 1–2 minutes.
- Taste and adjust seasoning as needed before serving.
