- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 can green chilies (4 oz)
- 2 cups cooked chicken, shredded
- 2 cans white beans, drained (15 oz each)
- 2 cups chicken broth
- 4 oz cream cheese
- ½ cup sour cream
- 1 tablespoon lime juice
- 1 cup corn (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and garlic and cook until soft and fragrant.
- Stir in Cajun seasoning and green chilies. Cook for 1 to 2 minutes to release flavor.
- Add shredded chicken, drained white beans, and chicken broth. Bring to a simmer and let cook for 15 to 20 minutes.
- Reduce heat to low and stir in cream cheese until fully melted.
- Stir in sour cream and lime juice. Simmer gently for 5 more minutes.
