Ingredients

  • 2 pounds beef stew meat (cut into 1-inch cubes)
  • 3 tablespoons all-purpose flour (optional, for thickening)
  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 4 carrots (sliced)
  • 3 potatoes (peeled and diced)
  • 2 celery stalks (sliced)
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)
  • Crusty bread or biscuits (for serving)

Instructions

  1. In a large bowl, toss the beef stew meat with flour (if using) until evenly coated.
  2. In a skillet, heat olive oil over medium-high heat.
  3. Add the beef in batches, browning on all sides (about 5-7 minutes). Transfer the browned beef to the crockpot.
  4. In the same skillet, add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  5. Add the sautéed onions and garlic to the crockpot with the beef.
  6. Add the sliced carrots, diced potatoes, sliced celery, frozen peas, beef broth, tomato paste, thyme, rosemary, bay leaf, salt, and pepper to the crockpot. Stir to combine.
  7. Cover and cook on low for 8 hours or on high for 4 hours, or until the beef is tender and the vegetables are cooked through.
  8. Before serving, taste the stew and adjust the seasoning with more salt and pepper if needed. Remove the bay leaf.
  9. Serve the stew hot, garnished with fresh parsley if desired. Enjoy with crusty bread or biscuits on the side.

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
