Description
Easy homemade beef stew is a hearty, comforting one-pot meal with tender chunks of beef simmered in a rich broth with carrots, potatoes, and aromatic herbs. It’s perfect for chilly nights, family dinners, and meal prep.

- 2 lbs stew beef (chuck roast cut into 1–1½” chunks)
- 2–3 tbsp all-purpose flour (for coating)
- Salt and black pepper, to taste
- 2–3 tbsp olive oil
- 1 large onion, chopped
- 3–4 cloves garlic, minced
- 2 tbsp tomato paste
- 4 cups beef broth
- 1–2 tbsp Worcestershire sauce
- 2–3 bay leaves
- 1 tsp dried thyme
- 3–4 carrots, peeled and sliced
- 3–4 potatoes, cubed (Yukon Gold or red potatoes)
- 2 stalks celery, sliced (optional)
- 2–3 tbsp fresh parsley, chopped (for garnish)
Instructions
- Toss the beef chunks with flour, salt, and black pepper until lightly coated.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, then transfer to a plate.
- In the same pot, add a bit more oil if needed. Sauté the onion, garlic, and tomato paste until fragrant, about 2–3 minutes.
- Return the browned beef to the pot. Pour in beef broth and Worcestershire sauce. Add bay leaves and dried thyme. Bring to a boil.
- Reduce heat to low, cover, and simmer gently for 1–1½ hours, until the beef begins to get tender.
- Add the carrots, potatoes, and celery (if using). Continue simmering, covered, for another 30–40 minutes until the vegetables are soft and the stew has thickened.
- Taste and adjust seasoning with salt and pepper. Remove bay leaves. Sprinkle chopped fresh parsley on top before serving.
