Heart-Shaped Linzer Cookies are a delightful treat perfect for any occasion.

- 2 cups all-purpose flour
- 1 cup ground almonds (or almond meal)
- ¾ cup unsalted butter, softened
- ¾ cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- ½ teaspoon salt
- 1 cup fruit preserves or jam (your choice)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract to the butter mixture and beat until well combined.
- In a separate bowl, mix together the flour, ground almonds, and salt.
- Gradually add the dry mixture to the wet mixture, mixing until a dough forms. The dough should hold together without being sticky.
- Wrap the dough tightly in plastic wrap and chill it in the refrigerator for at least 30 minutes. This will make it easier to roll out.
- On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness.
- Use heart-shaped cookie cutters to cut out shapes. For half of the cookies, cut a smaller heart shape in the middle to create a window for the filling.
- Place the cookies on the prepared baking sheets and bake for 10-12 minutes or until lightly golden around the edges.
- Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Spread a thin layer of fruit preserves or jam on the flat side of the solid heart-shaped cookies.
- Carefully place the cookies with cut-outs on top of the jam-covered cookies to form sandwiches.
- For a final touch, dust the tops of the cookies with powdered sugar before serving.
