Ingredients

  • ¾ cup unsalted butter, softened
  • ¾ cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ½ teaspoon salt
  • 1 cup fruit preserves or jam (your choice)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the egg, vanilla extract, and almond extract to the butter mixture and beat until well combined.
  4. In a separate bowl, mix together the flour, ground almonds, and salt.
  5. Gradually add the dry mixture to the wet mixture, mixing until a dough forms. The dough should hold together without being sticky.
  6. Wrap the dough tightly in plastic wrap and chill it in the refrigerator for at least 30 minutes. This will make it easier to roll out.
  7. On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness.
  8. Use heart-shaped cookie cutters to cut out shapes. For half of the cookies, cut a smaller heart shape in the middle to create a window for the filling.
  9. Place the cookies on the prepared baking sheets and bake for 10-12 minutes or until lightly golden around the edges.
  10. Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  11. Spread a thin layer of fruit preserves or jam on the flat side of the solid heart-shaped cookies.
  12. Carefully place the cookies with cut-outs on top of the jam-covered cookies to form sandwiches.
  13. For a final touch, dust the tops of the cookies with powdered sugar before serving.
