Description
Healthy Veggie Pizza Bites are a crispy snack filled with roasted veggies and gooey cheese. They’re quick to make and perfect for any occasion.

- 1 cup whole wheat flour (or all-purpose flour)
- 1/2 cup oat flour (blend rolled oats if needed)
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 large egg, room temperature
- 1/3 cup low-fat plain Greek yogurt
- 1 tablespoon olive oil
- 1/2 cup red bell pepper, finely diced
- 1/2 cup zucchini, finely diced
- 1/3 cup red onion, finely chopped
- 1/2 cup baby spinach, chopped
- 1/3 cup mushrooms, finely diced
- 2 tablespoons black olives, chopped (optional)
- 1/2 cup pizza sauce or marinara
- 2/3 cup shredded part-skim mozzarella cheese (or vegan mozzarella)
- 2 tablespoons grated Parmesan cheese (optional)
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- Crushed red pepper flakes, to taste (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a medium bowl, whisk together whole wheat flour, oat flour, baking powder, and sea salt.
- In another bowl, lightly beat the egg, then stir in Greek yogurt and olive oil.
- Add wet ingredients to dry, mixing until a soft dough forms. If sticky, add more flour a tablespoon at a time.
- Pinch off tablespoon-sized pieces of dough (about 20g each) and roll into balls. Place on baking sheet, spaced 2 inches apart.
- Flatten each ball into a 2-inch round, about 1/4 inch thick. Lightly oil fingers if needed.
- Spoon about 1 teaspoon of pizza sauce onto each round, spreading gently and leaving a small border.
- Scatter a mix of diced veggies evenly over each bite, pressing lightly into the sauce.
- Sprinkle shredded mozzarella and Parmesan over each bite. Finish with Italian herbs and red pepper flakes if desired.
- Bake for 13-16 minutes, until crust is golden and cheese is bubbling. Check at 13 minutes.
- Let cool on tray for 2-3 minutes, then transfer to a wire rack for 5 minutes.
- Serve warm and enjoy!
