Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 2 tablespoons cinnamon sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or donut hole pan with cooking spray.
  2. In a large mixing bowl, combine 1 cup of whole wheat flour, 1/2 cup of rolled oats, 1 teaspoon of baking powder, 1 teaspoon of pumpkin pie spice, and 1/2 teaspoon of salt. Mix well to combine.
  3. In another bowl, whisk together 1/2 cup of pumpkin puree, 1/4 cup of honey or maple syrup, 1/4 cup of unsweetened applesauce, 1 large egg, and 1 teaspoon of vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Spoon the batter into the prepared mini muffin tin or donut hole pan, filling each cavity about 3/4 full.
  6. Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean. The tops should be lightly golden.
  7. Allow the donut holes to cool in the pan for about 5 minutes before transferring them to a wire rack.
  8. While still warm, roll each donut hole in cinnamon sugar to coat.
