  • 1/2 cup granulated sugar (or coconut sugar)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup Greek yogurt (plain, non-fat or low-fat)
  • 1/4 cup unsweetened applesauce (or melted coconut oil)
  • 2 large eggs
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 1 teaspoon vanilla extract
  • For the Lemon Glaze (Optional):
  • 1/2 cup powdered sugar
  • 23 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the Greek yogurt, applesauce (or melted coconut oil), eggs, lemon zest, lemon juice, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. In a small bowl, mix the powdered sugar with lemon juice until smooth. Drizzle over the cooled loaf.
