Healthy Greek Yogurt Lemon Loaf Cake Recipe

- 1 cup whole wheat flour (or all-purpose flour)
- 1/2 cup granulated sugar (or coconut sugar)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup Greek yogurt (plain, non-fat or low-fat)
- 1/4 cup unsweetened applesauce (or melted coconut oil)
- 2 large eggs
- Zest of 1 lemon
- 1/4 cup fresh lemon juice (about 1–2 lemons)
- 1 teaspoon vanilla extract
- For the Lemon Glaze (Optional):
- 1/2 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the Greek yogurt, applesauce (or melted coconut oil), eggs, lemon zest, lemon juice, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- In a small bowl, mix the powdered sugar with lemon juice until smooth. Drizzle over the cooled loaf.
