Healthy Chicken & Sweet Potato Rice Bowl: A Meal Prep Powerhouse


Ingredients

Scale
  • 2 chicken breasts, cut into chunks
  • 2 medium sweet potatoes, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • Salt & pepper to taste
  • 2 cups cooked rice (white, brown, or cauliflower)
  • Chipotle Dressing
  • ½ cup Greek yogurt
  • 1 chipotle pepper in adobo (or 1 tsp chipotle powder)
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss chicken, sweet potatoes, and broccoli with olive oil, Cajun seasoning, salt, and pepper.
  3. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
  4. Blend dressing ingredients until smooth.
  5. Assemble bowls: rice on the bottom, topped with roasted chicken and veggies.
  6. Drizzle with chipotle dressing and serve or store for later.
