Healthy Chicken & Sweet Potato Rice Bowl: A Meal Prep Powerhouse
Ingredients

- 2 chicken breasts, cut into chunks
- 2 medium sweet potatoes, diced
- 2 cups broccoli florets
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- Salt & pepper to taste
- 2 cups cooked rice (white, brown, or cauliflower)
- Chipotle Dressing
- ½ cup Greek yogurt
- 1 chipotle pepper in adobo (or 1 tsp chipotle powder)
- 1 tbsp lime juice
- Salt to taste
Instructions
- Preheat oven to 425°F (220°C).
- Toss chicken, sweet potatoes, and broccoli with olive oil, Cajun seasoning, salt, and pepper.
- Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
- Blend dressing ingredients until smooth.
- Assemble bowls: rice on the bottom, topped with roasted chicken and veggies.
- Drizzle with chipotle dressing and serve or store for later.
