Ingredients

- 1 lb chicken breast
- 2 medium sweet potatoes
- 2 cups cooked rice
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups fresh spinach or kale
- 1 avocado
- 1 tbsp lemon juice
Instructions
- Peel and cube sweet potatoes, then toss in olive oil, paprika, salt, and pepper. Roast at 400°F for 25–30 minutes until tender.
- Season chicken with garlic powder, salt, and pepper. Cook in a skillet with olive oil until golden and cooked through, about 6–7 minutes per side.
- Slice the cooked chicken after resting.
- In bowls, add rice base, then top with sweet potatoes, chicken slices, fresh greens, and avocado.
- Drizzle lemon juice over each bowl and add optional toppings if desired.
