- 1 pound ground chicken
- 1 tablespoon olive oil
- 1 medium onion (finely diced)
- 2 cloves garlic (minced)
- 1 tablespoon ginger (minced)
- 1 cup shredded carrots
- 1 can (8 oz) water chestnuts (drained and diced)
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha sauce (optional)
- 1 head butter lettuce (leaves separated)
- 2 green onions (thinly sliced)
- 1/4 cup chopped peanuts
- Salt and pepper to taste
Instructions
- Start by heating olive oil in a large skillet over medium heat. Dice your onion into small, uniform pieces.
- Add the diced onion with a pinch of salt and cook for about 5 minutes until soft and translucent.
- Minced garlic and ginger, then add to the pan and cook for about 30 seconds.
- Add the ground chicken and break it up into small crumbles. Cook until no longer pink, about 5-7 minutes.
- Add shredded carrots and diced water chestnuts, stir together, and cook for about 2 minutes.
- Add hoisin sauce, soy sauce, rice vinegar, sesame oil, and sriracha. Stir well and let simmer for 2-3 minutes.
- Prepare lettuce leaves by gently separating them, rinsing, and patting dry.
- Taste the filling and adjust seasonings if needed.
- Spoon about 1/3 cup of the warm filling into each lettuce leaf. Top with sliced green onions and chopped peanuts.
