  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 medium onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon ginger (minced)
  • 1 cup shredded carrots
  • 1 can (8 oz) water chestnuts (drained and diced)
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha sauce (optional)
  • 1 head butter lettuce (leaves separated)
  • 2 green onions (thinly sliced)
  • 1/4 cup chopped peanuts
  • Salt and pepper to taste

Instructions

  1. Start by heating olive oil in a large skillet over medium heat. Dice your onion into small, uniform pieces.
  2. Add the diced onion with a pinch of salt and cook for about 5 minutes until soft and translucent.
  3. Minced garlic and ginger, then add to the pan and cook for about 30 seconds.
  4. Add the ground chicken and break it up into small crumbles. Cook until no longer pink, about 5-7 minutes.
  5. Add shredded carrots and diced water chestnuts, stir together, and cook for about 2 minutes.
  6. Add hoisin sauce, soy sauce, rice vinegar, sesame oil, and sriracha. Stir well and let simmer for 2-3 minutes.
  7. Prepare lettuce leaves by gently separating them, rinsing, and patting dry.
  8. Taste the filling and adjust seasonings if needed.
  9. Spoon about 1/3 cup of the warm filling into each lettuce leaf. Top with sliced green onions and chopped peanuts.
