Ingredients

  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup grated apple
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk applesauce, honey, coconut oil, eggs, and vanilla.
  4. Combine wet and dry ingredients. Fold in grated apple and walnuts.
  5. Pour batter into the loaf pan. Bake for 45-50 minutes or until a toothpick comes out clean.
  6. Let cool before slicing.
