Ingredients

- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more.
- Pour in chicken broth and bring to a boil.
- Add cooked chicken, egg noodles, dried thyme, bay leaf, salt, and pepper.
- Reduce heat and simmer for 10-12 minutes, or until noodles are cooked through.
- Remove the bay leaf and stir in fresh parsley before serving.
