Description

Hawaiian Pineapple Rice is a delightful tropical side dish that perfectly balances sweet and savory flavors. This easy recipe features fluffy jasmine rice, sweet pineapple, crisp bell peppers, and a hint of coconut, making it an ideal accompaniment to grilled meats, Asian-inspired dishes, or any weeknight meal.

Ingredients

Scale
  • 1 cup jasmine rice
  • 1 1/2 cups water or coconut milk
  • 1 tablespoon sesame oil or vegetable oil
  • 1/2 cup diced pineapple
  • 1/4 cup diced red bell pepper
  • 1/4 cup green onions, chopped
  • 1/4 cup diced carrots (optional)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon brown sugar (optional)
  • 1/4 teaspoon ground black pepper
  • 1/4 cup shredded coconut (optional)

Instructions

  1. Cook the rice: Combine rice and water (or coconut milk) in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until tender. Fluff with a fork.
  2. Sauté vegetables: Heat sesame oil in a skillet over medium heat. Add bell pepper, carrots (if using), and green onions. Sauté for 3-4 minutes until softened.
  3. Combine ingredients: Add the cooked rice and diced pineapple to the skillet. Stir to combine. Pour in soy sauce, brown sugar (if using), and black pepper. Stir well.
  4. Add coconut and serve: Stir in shredded coconut (if using) and cook for 2-3 minutes more. Serve hot, garnished with extra green onions or pineapple slices.

Notes

  • Use fresh pineapple for the best flavor and texture.
  • Drain canned pineapple well to prevent excess moisture in the rice.
  • Substitute tamari or coconut aminos for a gluten-free option.
  • Add cooked chicken or shrimp to make it a main course.
