Ingredients
Scale
- 1 cup jasmine rice
- 1 1/2 cups water or coconut milk
- 1 tablespoon sesame oil or vegetable oil
- 1/2 cup diced pineapple
- 1/4 cup diced red bell pepper
- 1/4 cup green onions, chopped
- 1/4 cup diced carrots (optional)
- 2 tablespoons soy sauce or tamari
- 1 tablespoon brown sugar (optional)
- 1/4 teaspoon ground black pepper
- 1/4 cup shredded coconut (optional)
Instructions
- Cook the rice: Combine rice and water (or coconut milk) in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until tender. Fluff with a fork.
- Sauté vegetables: Heat sesame oil in a skillet over medium heat. Add bell pepper, carrots (if using), and green onions. Sauté for 3-4 minutes until softened.
- Combine ingredients: Add the cooked rice and diced pineapple to the skillet. Stir to combine. Pour in soy sauce, brown sugar (if using), and black pepper. Stir well.
- Add coconut and serve: Stir in shredded coconut (if using) and cook for 2-3 minutes more. Serve hot, garnished with extra green onions or pineapple slices.
Notes
- Use fresh pineapple for the best flavor and texture.
- Drain canned pineapple well to prevent excess moisture in the rice.
- Substitute tamari or coconut aminos for a gluten-free option.
- Add cooked chicken or shrimp to make it a main course.
