  • 1 cup pineapple juice
  • 1/2 cup soy sauce

  • 1/4 cup ketchup

  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 (8 ounce) can crushed pineapple, undrained
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Place chicken thighs in the bottom of your slow cooker.
  2. In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, honey, Worcestershire sauce, garlic powder, ground ginger, and black pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Add the crushed pineapple (undrained) to the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  6. If you prefer a thicker sauce, remove the chicken from the slow cooker and set aside. In a small bowl, whisk together cornstarch and water to create a slurry. Stir the slurry into the liquid in the slow cooker. Cook on high for an additional 15-30 minutes, or until the sauce has thickened.
  7. Shred the chicken using two forks and return it to the slow cooker to coat with the thickened sauce.
