  • Diet: Vegetarian

Description

Create a spooky and fun Halloween dinner with these easy ground beef recipes. These mini meatloaves, shaped like mice or rats, are perfect for kids and parties, offering a savory twist on holiday treats.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 egg
  • 1/2 cup quick oats
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • Sliced black olives (for eyes and noses)
  • Spaghetti noodles (for whiskers and tails)
  • Almond slivers (for teeth or claws)
  • Bell pepper strips (for tails or ears)
  • Ketchup or BBQ sauce (for bloody topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or foil.
  2. In a large bowl, combine ground beef, egg, oats, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Use your hands to form 6–8 small meatloaves, each roughly mouse-shaped with a pointed nose and rounded body. Place them on the baking sheet.
  4. Decorate: Insert spaghetti pieces for whiskers. Use olive slices or bell pepper circles for ears. Add almond slivers for teeth. Place olive halves for eyes and nose. Press a spaghetti noodle or pepper strip into the back as a tail.
  5. Bake for 25–30 minutes, or until the meatloaves reach an internal temperature of 160°F (71°C).
  6. In the last 5 minutes, brush with ketchup or BBQ sauce for a glossy, “bloody” finish.
  7. Serve immediately, garnished with spooky sides.

Notes

  • Don’t overmix the meat to keep the meatloaves tender.
  • Shape smaller loaves so they hold their form well.
  • Add grated veggies to the mixture for extra nutrition.
  • Shape and refrigerate the meatloaves the day before baking for a make-ahead option.
  • Kids can help with the decorating for added fun.
