  • 1 cup buttermilk (room temperature)
  • ½ cup vegetable oil
  • 2 large eggs (room temperature)

  • Optional: 1 teaspoon espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9×13-inch baking dish.
  2. In a large mixing bowl, whisk together sugar, flour, cocoa powder, baking soda, baking powder, and salt.
  3. Make a well in the center of the dry ingredients. Pour in the hot coffee, buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Beat the mixture on medium speed with an electric mixer for 2 minutes. The batter will be thin.
