- 1 cup strong brewed coffee (hot)
- 1 cup buttermilk (room temperature)
- ½ cup vegetable oil
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
- Optional: ½ cup mini chocolate chips
- Optional: 1 teaspoon espresso powder
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9×13-inch baking dish.
- In a large mixing bowl, whisk together sugar, flour, cocoa powder, baking soda, baking powder, and salt.
- Make a well in the center of the dry ingredients. Pour in the hot coffee, buttermilk, vegetable oil, eggs, and vanilla extract.
- Beat the mixture on medium speed with an electric mixer for 2 minutes. The batter will be thin.
- Pour the batter evenly into the prepared pans.
- Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
