- 1/4 cup Fresh Parsley, chopped
- 1/4 cup Chives, chopped
Instructions
- Bring a large pot of heavily salted water to a rolling boil. Cook elbow macaroni according to package directions for 7-8 minutes.
- Drain the pasta thoroughly and rinse under cold water. Spread it on a baking sheet to cool completely.
- In a large skillet over medium-high heat, cook diced beef bacon until crispy, about 8-10 minutes.
- Transfer crispy bacon to a plate lined with paper towels. Reserve about a tablespoon of the rendered fat.
- Chop celery, red onion, dill pickles, and roasted red bell pepper. Mince parsley and chives.
- In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and optional maple syrup. Whisk until smooth.
- Add cooled pasta to the bowl with dressing. Fold in chopped celery, red onion, dill pickles, and roasted red bell pepper.
- Add most of the crispy beef bacon, reserving some for garnish. Fold gently to combine.
- Cover with plastic wrap and refrigerate for at least 2 hours, ideally 4 hours or overnight.
- Before serving, stir the salad. Adjust consistency with mayo, apple cider vinegar, or water if needed.
- Transfer to a serving bowl and garnish with reserved crispy beef bacon, parsley, and chives.
