  • 1 cup Celery, chopped
  • 1 cup Red Onion, chopped
  • 1 cup Dill Pickles, chopped
  • 1 cup Roasted Red Bell Pepper, chopped
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 cup Chives, chopped

Instructions

  1. Bring a large pot of heavily salted water to a rolling boil. Cook elbow macaroni according to package directions for 7-8 minutes.
  2. Drain the pasta thoroughly and rinse under cold water. Spread it on a baking sheet to cool completely.
  3. In a large skillet over medium-high heat, cook diced beef bacon until crispy, about 8-10 minutes.
  4. Transfer crispy bacon to a plate lined with paper towels. Reserve about a tablespoon of the rendered fat.
  5. Chop celery, red onion, dill pickles, and roasted red bell pepper. Mince parsley and chives.
  6. In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and optional maple syrup. Whisk until smooth.
  7. Add cooled pasta to the bowl with dressing. Fold in chopped celery, red onion, dill pickles, and roasted red bell pepper.
  8. Add most of the crispy beef bacon, reserving some for garnish. Fold gently to combine.
  9. Cover with plastic wrap and refrigerate for at least 2 hours, ideally 4 hours or overnight.
  10. Before serving, stir the salad. Adjust consistency with mayo, apple cider vinegar, or water if needed.
  11. Transfer to a serving bowl and garnish with reserved crispy beef bacon, parsley, and chives.
