- 1 lb ground beef
- 3 russet potatoes, peeled and diced
- 2 Yukon gold potatoes, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 6 cups beef broth
- 2 tbsp tomato paste
- 1 ½ tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 1 bay leaf
Instructions
- In a large Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary.
- Add diced onion, carrots, and celery to the beef. Sauté for 5 minutes until softened. Stir in minced garlic and cook for 1 minute.
- Stir in tomato paste and mix until combined. Pour in the beef broth.
- Add russet and Yukon gold potatoes, salt, pepper, Italian seasoning, and bay leaf. Stir well.
- Bring soup to a boil, then reduce heat to low. Cover and simmer for 25 to 30 minutes until potatoes are fork-tender.
- Remove bay leaf. Taste and adjust seasoning if needed. Serve hot.
