- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1 tbsp sugar
- 1/2 cup cold butter (cubed)
- 4–5 tbsp cold water
- 3–4 ripe peaches (sliced)
- 2–3 tbsp sugar (for filling)
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- Optional: cinnamon or nutmeg
- Optional: honey drizzle
- Optional: chopped nuts
Instructions
- In a bowl, mix flour, salt, and sugar.
- Add cold butter and mix until crumbly.
- Add cold water gradually until dough forms.
- Wrap dough and refrigerate for 30 minutes.
- Slice peaches and mix with sugar, lemon juice, and cornstarch.
- Roll dough into small circles.
- Place peach filling in the center of each dough circle.
- Fold edges over the filling to form a rustic shape.
- Preheat grill to medium heat.
- Place galettes on foil or a grill-safe pan.
- Grill for 20–25 minutes until crust is golden.
- Remove, cool slightly, and serve.
