This Green Salad with Basil Lemon Vinaigrette is crisp, fresh, and bursting with bright citrus-herb flavor. Mixed greens, crunchy cucumbers and radishes, juicy tomatoes, and creamy avocado are tossed with a vibrant basil lemon vinaigrette for an easy, healthy salad that works as a light meal or refreshing side dish.

- 6 cups mixed greens (spring mix, baby spinach, or arugula)
- 1 medium cucumber, sliced
- 1 cup cherry tomatoes, halved
- 6 radishes, thinly sliced
- 1 ripe avocado, diced
- 1 cup fresh basil leaves, packed
- 1 large lemon, juiced (about 3 tablespoons)
- 1 teaspoon lemon zest
- 1/4 cup extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 small garlic clove, minced
- 1/2 teaspoon fine salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
Instructions
- Wash and thoroughly dry the mixed greens, then place them in a large salad bowl.
- Prep the vegetables: slice the cucumber, halve the cherry tomatoes, and thinly slice the radishes. Add them to the bowl with the greens.
- Make the basil lemon vinaigrette: add basil, lemon juice, lemon zest, olive oil, Dijon mustard, honey (or maple syrup), garlic, salt, and black pepper to a blender or food processor. Blend until smooth and bright green.
- Taste the vinaigrette and adjust as needed. Add a pinch more salt for balance, a splash of lemon for extra tang, or a drizzle of olive oil for a smoother finish.
- Drizzle enough basil lemon vinaigrette over the salad to lightly coat the greens (start with about half). Toss gently to combine.
- Add the diced avocado on top right before serving. Toss very lightly (or leave on top) to keep the avocado from breaking down.
- Serve immediately. If desired, add an extra drizzle of vinaigrette at the table for more flavor.
