Description

This Green Salad with Basil Lemon Vinaigrette is crisp, fresh, and bursting with bright citrus-herb flavor. Mixed greens, crunchy cucumbers and radishes, juicy tomatoes, and creamy avocado are tossed with a vibrant basil lemon vinaigrette for an easy, healthy salad that works as a light meal or refreshing side dish.

  • 6 cups mixed greens (spring mix, baby spinach, or arugula)
  • 1 medium cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 6 radishes, thinly sliced
  • 1 ripe avocado, diced
  • 1 cup fresh basil leaves, packed
  • 1 large lemon, juiced (about 3 tablespoons)
  • 1 teaspoon lemon zest
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 small garlic clove, minced
  • 1/2 teaspoon fine salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste

Instructions

  1. Wash and thoroughly dry the mixed greens, then place them in a large salad bowl.
  2. Prep the vegetables: slice the cucumber, halve the cherry tomatoes, and thinly slice the radishes. Add them to the bowl with the greens.
  3. Make the basil lemon vinaigrette: add basil, lemon juice, lemon zest, olive oil, Dijon mustard, honey (or maple syrup), garlic, salt, and black pepper to a blender or food processor. Blend until smooth and bright green.
  4. Taste the vinaigrette and adjust as needed. Add a pinch more salt for balance, a splash of lemon for extra tang, or a drizzle of olive oil for a smoother finish.
  5. Drizzle enough basil lemon vinaigrette over the salad to lightly coat the greens (start with about half). Toss gently to combine.
  6. Add the diced avocado on top right before serving. Toss very lightly (or leave on top) to keep the avocado from breaking down.
  7. Serve immediately. If desired, add an extra drizzle of vinaigrette at the table for more flavor.
