  • 1 cup Roma tomatoes (seeded and diced)
  • 4 wraps Spinach tortillas

Instructions

  1. Blend the Filling: In a food processor or blender, combine the feta cheese, Greek yogurt, red wine vinegar, minced garlic, black pepper, and oregano. Blend until creamy and delightful, ensuring it’s well mixed for a smooth texture.
  2. Combine the Veggies: In a medium-sized bowl, gently mix the cucumber, tomatoes, olives, onion, and parsley. Add a pinch of salt and pepper for seasoning. Set this vibrant mixture aside—it will add a refreshing crunch!
  3. Warm the Tortillas: Microwave the tortillas for 15-20 seconds to soften them. This step makes them pliable and easier to roll without tearing.
