  • 1 cup Feta Cheese
  • 1 cup Grape Tomatoes
  • 1 medium English Cucumber
  • 1 medium Red Bell Pepper
  • 1/2 cup Kalamata Olives
  • 1/4 cup Red Onion
  • 1/3 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 tablespoon Honey
  • 2 cloves Garlic
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Dried Herbs
  • to taste Salt
  • to taste Black Pepper

Instructions

  1. Boil rotini according to package instructions. Once cooked, drain and rinse it under cool water.
  2. Chop the grape tomatoes, cucumber, red bell pepper, kalamata olives, and red onion into bite-sized pieces.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, honey, minced garlic, Dijon mustard, dried herbs, salt, and pepper until well combined.
  4. In a large mixing bowl, combine the drained pasta with the chopped vegetables and crumbled feta cheese. Gently mix to combine.
  5. Pour the dressing over the salad and toss gently to coat evenly.
  6. Refrigerate for at least 30 minutes to allow flavors to meld.
