- 8 ounces Rotini Pasta
- 1 cup Feta Cheese
- 1 cup Grape Tomatoes
- 1 medium English Cucumber
- 1 medium Red Bell Pepper
- 1/2 cup Kalamata Olives
- 1/4 cup Red Onion
- 1/3 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- 1 tablespoon Honey
- 2 cloves Garlic
- 1 tablespoon Dijon Mustard
- 1 teaspoon Dried Herbs
- to taste Salt
- to taste Black Pepper
Instructions
- Boil rotini according to package instructions. Once cooked, drain and rinse it under cool water.
- Chop the grape tomatoes, cucumber, red bell pepper, kalamata olives, and red onion into bite-sized pieces.
- In a separate bowl, whisk together the olive oil, red wine vinegar, honey, minced garlic, Dijon mustard, dried herbs, salt, and pepper until well combined.
- In a large mixing bowl, combine the drained pasta with the chopped vegetables and crumbled feta cheese. Gently mix to combine.
- Pour the dressing over the salad and toss gently to coat evenly.
- Refrigerate for at least 30 minutes to allow flavors to meld.
