  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme

  • Freshly cracked black pepper, to taste
  • 1 tablespoon fresh parsley or dill, chopped
  • 1 tablespoon sesame seeds (for topping)

Instructions

  1. Combine warm water, sugar, and yeast in a bowl. Let sit 5–10 minutes until foamy.
  2. Add olive oil, salt, and flour. Knead 8–10 minutes until smooth. Cover and let rise for 1 hour until doubled.
  3. Mix feta, oregano, thyme, garlic powder, and black pepper gently.
  4. Roll dough into a rectangle, sprinkle feta mixture evenly, roll tightly, and place seam-side down in a greased loaf pan.
  5. Cover and let rise for 30 minutes until slightly puffed.
  6. Bake at 350°F (175°C) for 35–40 minutes until golden brown.
  7. Cool 10–15 minutes before slicing and serving.
