- 3 cups all-purpose flour
- 2 1/4 teaspoons active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 3/4 cup warm water
- 3 tablespoons olive oil
- 1 1/2 cups crumbled feta cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Freshly cracked black pepper, to taste
- 1 tablespoon fresh parsley or dill, chopped
- 1 tablespoon sesame seeds (for topping)
Instructions
- Combine warm water, sugar, and yeast in a bowl. Let sit 5–10 minutes until foamy.
- Add olive oil, salt, and flour. Knead 8–10 minutes until smooth. Cover and let rise for 1 hour until doubled.
- Mix feta, oregano, thyme, garlic powder, and black pepper gently.
- Roll dough into a rectangle, sprinkle feta mixture evenly, roll tightly, and place seam-side down in a greased loaf pan.
- Cover and let rise for 30 minutes until slightly puffed.
- Bake at 350°F (175°C) for 35–40 minutes until golden brown.
- Cool 10–15 minutes before slicing and serving.
