- 1 cup long-grain white rice (or brown rice for a healthier option)
- 1 can (10.5 oz) cream of chicken soup (or homemade for a fresher taste)
- 1 cup chicken broth (low-sodium recommended)
- 1 cup milk (whole or low-fat)
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1 cup frozen peas and carrots (or your choice of mixed vegetables)
- 2 tablespoons olive oil (or butter)
- 1 teaspoon dried thyme (or Italian seasoning)
- Salt and pepper (to taste)
- Fresh parsley (for garnish, optional)
Instructions
- Heat Olive Oil: In a large skillet or Dutch oven, heat the olive oil over medium heat.
- Cook Chicken: Add the chicken pieces, season with salt and pepper, and sauté until browned and cooked through (about 5-7 minutes). Remove the chicken from the skillet and set aside.
- Sauté Onion and Garlic: In the same skillet, add the chopped onion and cook until translucent (about 3-4 minutes). Add the minced garlic and cook for an additional minute until fragrant.
- Add Rice and Liquids: Stir in the rice, cream of chicken soup, chicken broth, and milk. Mix well to combine.
- Season: Add the dried thyme and stir to incorporate the flavors.
- Return Chicken: Add the cooked chicken back into the skillet along with the frozen peas and carrots.
- Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.
- Check for Seasoning: Taste and adjust the seasoning with more salt and pepper if needed.
- Garnish: Serve hot, garnished with fresh parsley if desired.
