Gooey gluten-free brownie fudge that is rich and delicious.

- 1/2 cup unsalted butter (1 stick)
- 1 cup semi-sweet chocolate chips (or dark chocolate chips)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cocoa powder (unsweetened)
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup gluten-free all-purpose flour (or almond flour for a nutty flavor)
- Optional toppings: additional chocolate chips, nuts, or sea salt
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
- In a medium saucepan over low heat, melt the butter and chocolate chips together, stirring until smooth. Remove from heat and let it cool slightly.
- In a large mixing bowl, whisk together the granulated sugar, eggs, and vanilla extract until well combined.
- Slowly add the melted chocolate mixture to the sugar and egg mixture, stirring until fully incorporated.
- In a separate bowl, whisk together the cocoa powder, salt, baking powder, and gluten-free flour.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Pour the brownie batter into the prepared baking pan, spreading it evenly.
- If desired, sprinkle additional chocolate chips or nuts on top.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the brownies to cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
- Once cooled, cut into squares and enjoy your gooey gluten-free brownie fudge!
