Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the yellow cake mix, melted butter, eggs, and vanilla extract. Stir until well combined and a thick dough forms.
- For easier handling, you can chill the dough in the refrigerator for about 30 minutes, but this step is optional.
- Using a cookie scoop or tablespoon, scoop out dough and roll it into balls. The dough will be sticky, so wet your hands slightly if needed.
- Roll each ball of dough in powdered sugar until fully coated. This will give the cookies a beautiful, snowy appearance.
- Arrange the powdered sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are still soft. They will continue to set as they cool.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
