- 1 ¼ cup gluten-free flour
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ¾ cup brown sugar, packed
- ¾ cup creamy peanut butter
- 1 large egg
- 2 teaspoons vanilla extract
- 1 ¼ cups mini marshmallows, frozen
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine butter, granulated sugar, brown sugar, and peanut butter. Mix until smooth.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together gluten-free flour, baking soda, and sea salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the frozen mini marshmallows.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until edges are set and tops are golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
