Description

Delicious gluten-free cookies combining peanut butter and marshmallows for a chewy treat.


Ingredients

  • 1 ¼ cup gluten-free flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¾ cup brown sugar, packed
  • ¾ cup creamy peanut butter
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 ¼ cups mini marshmallows, frozen

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine butter, granulated sugar, brown sugar, and peanut butter. Mix until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together gluten-free flour, baking soda, and sea salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the frozen mini marshmallows.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until edges are set and tops are golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
