- 8 oz gluten-free pasta (fusilli or penne work best)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ red onion, thinly sliced
- ½ cup black olives, sliced
- 1 cup bell peppers, diced (mix colors!)
- ½ cup feta cheese (optional or dairy-free version)
- 2 tbsp fresh parsley or basil, chopped
- ¼ cup olive oil
- 2 tbsp red wine vinegar or lemon juice
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- Salt & pepper to taste
Instructions
- Cook gluten-free pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine pasta, tomatoes, cucumber, onion, olives, bell peppers, and feta.
- In a jar or small bowl, whisk together olive oil, vinegar, mustard, garlic, salt, and pepper.
- Pour dressing over salad and toss gently to coat.
- Garnish with fresh herbs and chill for 30 minutes before serving for best flavor.
