Description

This vibrant gluten-free pasta salad is a go-to for potlucks, picnics, or quick lunches. Packed with crunchy veggies, zesty dressing, and gluten-free pasta, it’s light, refreshing, and satisfying—all without the gluten.


Ingredients

  • 8 oz gluten-free pasta (fusilli or penne work best)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup black olives, sliced
  • 1 cup bell peppers, diced (mix colors!)
  • ½ cup feta cheese (optional or dairy-free version)
  • 2 tbsp fresh parsley or basil, chopped
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • Salt & pepper to taste

Instructions

  1. Cook gluten-free pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine pasta, tomatoes, cucumber, onion, olives, bell peppers, and feta.
  3. In a jar or small bowl, whisk together olive oil, vinegar, mustard, garlic, salt, and pepper.
  4. Pour dressing over salad and toss gently to coat.
  5. Garnish with fresh herbs and chill for 30 minutes before serving for best flavor.
