- 1 cup powdered sugar (120g, for the glaze)
- 2 tablespoons lemon juice (for the glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg, lemon zest, lemon juice, and vanilla extract, beating until combined.
- Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden and the centers are soft.
