Instructions
- In a large bowl, whisk together flour, ginger, cinnamon, baking soda, nutmeg, and salt.
- In another bowl, beat butter and brown sugar until light and fluffy.
- Add molasses, egg, and vanilla extract; mix until smooth.
- Gradually mix in the dry ingredients on low speed until a soft dough forms.
- Shape dough into a thick disk, wrap tightly, and refrigerate for at least 4 hours or overnight.
- Preheat oven to 350°F (175°C). Roll dough on a lightly floured surface to ¼-inch thickness.
- Cut into gingerbread men shapes and place 1 inch apart on ungreased baking sheets.
- Bake for 8–10 minutes, until edges are set and lightly browned.
- Cool briefly on the baking sheet, then transfer to wire racks to cool completely before decorating.
