Instructions
- Whisk together flour, ginger, cinnamon, cloves, baking soda, and salt in a medium bowl.
- In a large bowl, cream together softened butter and brown sugar until light and fluffy.
- Beat in the egg until well combined.
- Stir in the molasses and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and refrigerate for at least 2 hours.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out one disk of dough to 1/4-inch thickness.
- Cut out shapes using cookie cutters.
- Place cookies 1-inch apart on the prepared baking sheets.
- Bake for 8-10 minutes, or until edges are firm.
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Decorate as desired.
