Giant strawberry shortcake biscuits are a classic summer dessert made with fluffy homemade biscuits, sweet macerated strawberries, and creamy topping, perfect for an easy and delicious treat.

- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup sugar
- 1/2 cup cold butter (cubed)
- 3/4 cup milk
- 2 cups fresh strawberries (sliced)
- 2–3 tbsp sugar (for strawberries)
- 1 cup whipped cream
- Optional: vanilla extract
- Optional: lemon zest
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix flour, baking powder, salt, and sugar.
- Add cold butter and mix until crumbly.
- Add milk and mix until a soft dough forms.
- Shape dough into large biscuit rounds and place on a baking sheet.
- Bake for 15–18 minutes until golden brown.
- Slice strawberries and mix with sugar. Let sit for 15–20 minutes.
- Slice biscuits in half once slightly cooled.
- Add strawberries and whipped cream to the bottom half.
- Top with the other half of the biscuit.
- Serve immediately.
