Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil, plus more for greasing
  • 3/4 cup warm water
  • Optional: 2 tablespoons grated Parmesan cheese

Instructions

  1. In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together flour and salt.
  3. Add the foamy yeast mixture, olive oil, chopped rosemary, minced garlic, and Parmesan cheese (if using) to the flour mixture.
  4. Mix until a shaggy dough forms.
  5. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  6. Lightly grease a bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  7. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin.
  8. Punch down the risen dough and divide it into 12 equal portions.
  9. Shape each portion into a ball and place them into the prepared muffin cups.
  10. Gently press your fingertips into the top of each muffin to create dimples, similar to focaccia bread. Drizzle a little olive oil over the top of each muffin.
  11. Bake for 18-22 minutes, or until golden brown and cooked through.
  12. Let the Garlic Rosemary Focaccia Muffins cool in the tin for a few minutes before transferring them to a wire rack.
