It features light, flaky halibut fillets baked with a crispy, savory crust of garlic, Parmesan cheese, and panko breadcrumbs. The result is a tender interior with a golden, flavorful exterior, perfect for an elegant yet easy dinner.
Ingredients
Scale
- 4 halibut fillets (about 6 ounces each, skinless)
- ½ cup panko breadcrumbs
- ⅓ cup grated Parmesan cheese
- 2 tablespoons melted butter
- 1 tablespoon olive oil
- 2 cloves garlic, finely minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon lemon zest
- 1 tablespoon chopped parsley (optional, for garnish)
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a small bowl, combine the panko breadcrumbs, grated Parmesan cheese, minced garlic, melted butter, olive oil, salt, pepper, and lemon zest. Mix until the ingredients form coarse crumbs.
- Pat the halibut fillets dry with a paper towel. Place them on the prepared baking sheet. Lightly brush the tops of the fillets with olive oil or melted butter.
- Spoon the garlic-Parmesan mixture evenly over each halibut fillet. Gently press the mixture down to create a thick, even crust.
- Bake for 12–15 minutes, depending on the thickness of the fillets. The fish is done when it flakes easily with a fork and the crust is golden brown.
- Garnish with chopped parsley, if desired. Serve immediately with lemon wedges for brightness.
Notes
- Use fresh halibut for the best flavor and texture.
- Do not overbake, as halibut can dry out quickly.
- Lemon zest significantly enhances the fish’s natural sweetness.
- Mix the topping just before baking to maintain the crispness of the breadcrumbs.
- Serve with roasted vegetables or a light salad for a complete meal.
- This crust also works well on other white fish like cod or grouper.
