Description

Garlic Parmesan Chicken Pasta is a rich and creamy one-pan meal that brings together tender chicken, pasta, and a savory garlic parmesan sauce.


Ingredients

  • 1 lb Boneless, Skinless Chicken Breasts
  • 1 tbsp Italian Seasoning
  • 1/2 tsp Paprika
  • Salt & Pepper to taste
  • 1 tbsp Avocado Oil (or Olive Oil)
  • 1 tbsp Unsalted Butter
  • 1/2 Jumbo Yellow Onion, diced (about 1 cup)
  • 46 large cloves Garlic, minced
  • 2 cups Chicken Broth
  • 8 oz Dry Penne Pasta (can substitute gluten-free)
  • 1 cup Freshly Grated Parmesan Cheese
  • 1/2 cup Heavy Cream
  • 2 tbsp Fresh Parsley, chopped

Instructions

  1. Flatten chicken breasts to about 1/2 inch thick. Season with Italian seasoning, paprika, salt, and pepper.
  2. Heat avocado oil in a large pan over medium heat. Cook the chicken for 3-5 minutes on each side until the internal temperature reaches 165°F. Remove the chicken from the pan and set aside.
  3. Reduce heat and add butter and avocado oil to the pan. Sauté the onion for 3 minutes until tender, then add garlic and cook for an additional minute.
  4. Deglaze the pan with chicken broth, scraping the browned bits from the bottom. Bring the broth to a boil.
  5. Add dry pasta to the boiling broth, ensuring the pasta is submerged. Cover and cook for 10 minutes, or until the pasta is al dente.
  6. Turn off the heat and stir in heavy cream, parmesan, and parsley. Adjust seasoning with salt and pepper to taste.
  7. Slice the cooked chicken into strips and return it to the pan with the pasta. Toss to combine, then serve.
