- 1 lb Boneless, Skinless Chicken Breasts
- 1 tbsp Italian Seasoning
- 1/2 tsp Paprika
- Salt & Pepper to taste
- 1 tbsp Avocado Oil (or Olive Oil)
- 1 tbsp Unsalted Butter
- 1/2 Jumbo Yellow Onion, diced (about 1 cup)
- 4–6 large cloves Garlic, minced
- 2 cups Chicken Broth
- 8 oz Dry Penne Pasta (can substitute gluten-free)
- 1 cup Freshly Grated Parmesan Cheese
- 1/2 cup Heavy Cream
- 2 tbsp Fresh Parsley, chopped
Instructions
- Flatten chicken breasts to about 1/2 inch thick. Season with Italian seasoning, paprika, salt, and pepper.
- Heat avocado oil in a large pan over medium heat. Cook the chicken for 3-5 minutes on each side until the internal temperature reaches 165°F. Remove the chicken from the pan and set aside.
- Reduce heat and add butter and avocado oil to the pan. Sauté the onion for 3 minutes until tender, then add garlic and cook for an additional minute.
- Deglaze the pan with chicken broth, scraping the browned bits from the bottom. Bring the broth to a boil.
- Add dry pasta to the boiling broth, ensuring the pasta is submerged. Cover and cook for 10 minutes, or until the pasta is al dente.
- Turn off the heat and stir in heavy cream, parmesan, and parsley. Adjust seasoning with salt and pepper to taste.
- Slice the cooked chicken into strips and return it to the pan with the pasta. Toss to combine, then serve.
