  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon paprika
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the russet potatoes thoroughly. Slice them vertically about 1/4 inch apart without cutting all the way through.
  3. In a small bowl, mix melted butter with minced garlic, rosemary, thyme, salt, black pepper, and paprika.
  4. Place the sliced potatoes on a parchment-lined baking sheet and generously brush the herb mixture over them, allowing it to seep into the slices.
  5. Roast in the preheated oven for 45–50 minutes, basting every 15 minutes with reserved herb butter until golden brown and tender.
  6. Garnish with freshly chopped parsley before serving.
