  • 23 tablespoons unsalted butter (melted)
  • 3 garlic cloves (minced)
  • 1 teaspoon paprika (smoked or sweet, your choice)
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill, finely chopped)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon coarse kosher salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 lemon (zest plus juice)
  • 12 teaspoons fresh thyme leaves (or a pinch of dried thyme)
  • 1 teaspoon chopped fresh rosemary

Instructions

  1. Preheat oven to 400°F.
  2. Lightly grease a baking dish or line a rimmed sheet with parchment.
  3. Pat the cod fillets dry with paper towels.
  4. Melt the butter.
  5. Add the melted butter, sweet paprika, garlic powder, dill, table salt, black pepper, fresh chopped garlic, and lemon zest to a small bowl.
  6. Mix to combine.
  7. Add the lemon juice to the bowl and stir to combine.
  8. Place fillets in the baking dish, spaced apart.
  9. Spoon or brush 1–2 tablespoons of the butter-herb mixture over each fillet.
  10. Place the baking dish on the center rack of the preheated oven and bake for 12-15 minutes, depending on the thickness.
  11. Remove from oven. Spoon any remaining butter-herb mixture over the fillets, squeeze a little lemon juice over the top, and garnish with lemon wedges and rosemary.
