This garlic herb baked cod delivers flaky texture, bright citrus notes, and savory garlic flavor in under 30 minutes.

- 3 cod fillets (about 6–7 oz each, skin removed)
- 2 –3 tablespoons unsalted butter (melted)
- 3 garlic cloves (minced)
- 1 teaspoon paprika (smoked or sweet, your choice)
- 1 teaspoon dried dill (or 1 tablespoon fresh dill, finely chopped)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon coarse kosher salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1 lemon (zest plus juice)
- 1–2 teaspoons fresh thyme leaves (or a pinch of dried thyme)
- 1 teaspoon chopped fresh rosemary
Instructions
- Preheat oven to 400°F.
- Lightly grease a baking dish or line a rimmed sheet with parchment.
- Pat the cod fillets dry with paper towels.
- Melt the butter.
- Add the melted butter, sweet paprika, garlic powder, dill, table salt, black pepper, fresh chopped garlic, and lemon zest to a small bowl.
- Mix to combine.
- Add the lemon juice to the bowl and stir to combine.
- Place fillets in the baking dish, spaced apart.
- Spoon or brush 1–2 tablespoons of the butter-herb mixture over each fillet.
- Place the baking dish on the center rack of the preheated oven and bake for 12-15 minutes, depending on the thickness.
- Remove from oven. Spoon any remaining butter-herb mixture over the fillets, squeeze a little lemon juice over the top, and garnish with lemon wedges and rosemary.
